[I] Six years photographing Le Chalet de la Forêt, working directly with chef Pascal Devalkeneer. [II] Seasonal rhythm - four to six visits a year - across plates, kitchen, dining room, team, and garden. [III] A working method built around the restaurant's own operation: photographing before and during service to optimise both time and ingredients.
